Mixed Lentil Soup Recipe

Ingredients are hard to come by, and you have mouths to feed. Here is a simple lentil soup recipe that can scale up to whatever size you need with relatively few ingredients. Pair it with a grilled cheese sandwich for the ultimate in comfort food, or add some rice into the soup for a more substantial one pot meal.

Time needed: 55 minutes

Mixed Lentil Soup Recipe

  1. Boil lentils in water

    Bring 1.5 cup dry lentils in 2 quarts of water to a boil and then simmer for 30 minutes

  2. Mirepoix

    Dice up 1 medium size onion, 1-2 stalks celery and 1 medium sized carrot. Add 2-3 diced cloves of garlic for good measure.

  3. Saute Mirepoix

    Saute the mirepoix and garlic in 1 T of olive oil for about 6-8 minutes, until the vegetables are soft but not browned. Add tablespoon at a time of water to avoid browning.

  4. Add seasoning

    Add 1/2 cup chopped cilantro
    1 tsp salt
    1 tsp thyme (or oregano, or cumin, or all 3)

  5. Combine and Simmer

    Mix mirepoix into the lentils and bring to a boil. Then simmer for an additional 10 minutes.

  6. Voila

    Season with a splash of lime juice and/or hot sauce of your choice. Top with some diced raw onion for a crunch and enjoy!
    You can take this further by having it over brown rice or even add in some diced raw potato at stage 5.
